Chevalier Montrachet: Vineyard and Winemaking

Lying above the Le Montrachet Grand Cru vineyard, Chevalier Montrachet sits at a higher elevation as compared to other Grands Crus on the Montrachet hill. The vines thrive on soils enriched with limestone and marl deposits. 

The limestone soils contribute to the wine’s delightful mineral character, and the high altitudes ensure suitable grape ripening conditions. 

The vines are nurtured with biodynamic practices, and the grapes are manually harvested once they have reached optimal ripeness. 

During vinification, the grape bunches are gently pressed and then decanted for 24 hours to enhance the wine’s flavor. Then the winemaker moves the wine to another vessel for racking. 

The wines undergo barrel fermentation for 12 months and are then aged in stainless steel tanks for 6 months. 

Depending on the wine producer, the wines are subjected to very light filtering before being packaged for sale.
