The Beautiful Vineyards and Winemaking Techniques of Cavallotto Winery

The iconic Cavallotto Fratelli vineyard, known as Tenuta Vitivinicola Cavallotto, is located near the Castiglione Falletto township, on the Bricco Boschis hill.

The vines owned by the Cavallotto family enjoy the superb microclimate and geological structure perfect for grape cultivation.

The 25 hectares of vineyard plots are divided into three, of which two are blended to form the flagship Barolo DOCG Bricco Boschis, and the third is, Vignolo, a single vineyard parcel.

The vineyard grows around 17 hectares of Nebbiolo, 3 hectares of Dolcetto, 2 hectares of Barbera, and the rest is Freisa, Pinot Noir, Chardonnay, and Grignolino.

After harvest, the grapes are brought to the vinification room with horizontal and vertical temperature-controlled stainless steel tanks for fermentation.

The Dolcetto and Freisa grapes are transferred for malolactic to the concrete tanks. The Barolo, Nebbiolo, and Barbera grape varieties are separated from the sediments and sent to age in Slavonian oak casks.
