  • La Haute Lemblee: This wine is made only with Chardonnay grapes.

  • Le Creux d'Enfer Rose: This wine is produced with only Pinot Noir grapes.

Vineyards and Winemaking At Cedric Bouchard’s Winery

Cedric Bouchard has approximately 4.2 hectares of grape vine parcels located in Aube. The terroir has limestone and clay soil which Bouchard farms organically. 

He waits for the optimum moment to harvest the grapes. The grapes are then pressed, and the juice is fermented with indigenous yeast in stainless steel, followed by malolactic fermentation in the bottle. 

The sparkling wine is made with low pressure (less bubbly) and no filtering, fining or cold stabilization. 

He bottles the wines with no dosage under pressure that’s less than other Champagnes. This created delicate wines reflecting the region’s terroir beautifully.
