Some major Premier Crus climats on the right bank of the Serein river are Fourchaume, Montee de Tonnerre, and Vaucoupin. And on the left bank, Vaillons, Monts Mains, and Vosgros are some of the major ones.

While basic Chablis is fermented in stainless steel vats, most  1er Cru Chablis winemakers use the oak barrel for fermentation to impart vanilla flavors. Also, the wines also go through malolactic fermentation to soften the acidity.
