Sherry is Spain’s star fortified wine native to Jerez, a southern Spanish town.

A traditional Sherry wine is produced from three white wine grapes - Palomino, Moscatel, and Pedro Ximenez.

  • Dry Sherry: It is a low acidity wine with low residual sugar. 
  • Naturally Sweet Wines: Naturally sweet wines are produced by stopping the fermentation mid-way, leaving the wine with a bit of residual sugar.

  • Macabeo
  • Xarel lo
  • Parellada

Some Cava winemakers also add other grapes like Chardonnay to the blend.

Cava is aged in the bottle on its lees for at least nine months, Cava Reserva for 15 months, and Cava Gran Reserva for 30 months.
