Domaine Dujac: Vineyards and Winemaking

In addition to the 4.5 hectares of vineyards in Morey Saint Denis, Domaine Dujac also has impressive vineyard holdings in:

In the early 1990s, Dujac stopped using herbicides in the vineyard, which introduced a degree of biodiversity in the soil - leading to better quality vines.

During winemaking, Jacques’ son Jeremy de-stems some clusters and uses 100% new oak for their Grand Cru wines, 60-80% new oak for the Premier Cru wines, and 40% new oak for the Village wines. 

The wine ages on its lees for around one year and is then racked to remove the carbon dioxide. 

The Dujac red wines are bottled without fining in most vintages. The grapes for the white wines are crushed ever so slightly, and there’s no battonage.

A Brief History of Domaine Dujac

Jacques’s father, ​​Louis Seysses, introduced him to the world of fine food and wine. Later, Jacques learnt the craft of winemaking from famous vignerons like Charles Rousseau of Domaine Armand Rousseau and Gérard Potel of Domaine Pousse d’Or.

In 1976, Jacques Seysses purchased Domaine Marcel Graillet - a small property in Morey St Denis - and renamed it Domaine Dujac. He developed his proprietary protocol by blending modern techniques with certain traditional winemaking practices.

Jacques expanded its estate in the late 20th century, acquiring Grand Cru plots in famous communes like Vosne Romanée and Gevrey Chambertin. He also started producing white wines from the Puligny-Montrachet Premier Crus and Les Monts Luisants.

The family also runs a négoce firm, Dujac Fils & Père that features fruits from around Morey, Nuits-Saint-Georges, and Chambolle Musigny.

Today, Jacques’s son, Jeremy Seysses, manages the vinifications with his wife, Diana Snowden, a U C Davis graduate in enology. She also looks after cellaring management. Jeremy’s brother, Alec, manages the Domaine’s administration.
