In the Dominio de Pingus winery, Peter Sissek ferments the Tempranillo grape varieties from La Horra’s old vines with indigenous yeasts.

The malolactic fermentation takes place for about two to three weeks. 

These wines are then aged for about 18 months in new French oak barrels before being bottled.
