Winemaking at G.H. Mumm

The grapes are harvested by hand around 100 days after their flowering (September-October.)

After harvest, the berries are crushed and fermented into still wine. Then, the still wines are carefully blended, and reserve wine is added to the final blend. 

After the secondary fermentation, the winemaker ages the wine in the Mumm cellars for 2.5 to 5 years. That’s when the wine develops its complex aromas and flavors. 

The final step is adding the dosage (a mix of cane sugar and reserve wine, which determines the Champagne’s sweetness levels.)

Then, the bottles rest in the cellar to let the dosage blend in properly.
