Trocken is the German word for dry and is used to classify dry style German wines. Outside Germany, Austria also uses the term for its dry wine styles. 

Riesling wines bearing the trocken label contain minimal residual sugar levels. Typically, a Riesling Trocken wine has around 9 grams of sugar per liter.

What kind of grapes are used for Riesling Trocken?

Riesling Trocken wine is made from early-ripened grape bunches that contain high acidity and low sugar levels. The grape bunches are picked immediately after ripening because leaving them on the vines for a long period will concentrate the grape juice and increase its sweetness. 

However, some German winemakers also produce Riesling Trocken from late harvest grapes. They bring down the sweetness by prolonging fermentation and converting the natural grape sugar into alcohol.
