About This Wine
Calling 2018 Domaine Jean Yves Bizot Le Chapitre a rare find would be an understatement. The geologist turned oenologist behind his pinot noir has exacting standards that cap production at 10,000 bottles. (In less hospitable vintages, that number falls closer to 5,000 bottles.) Everything part of the winemaking process emphasizes purity and grace. Bizot handpicks his fruits, vinifying clusters whole before fermenting them in wooden vats. After an extensive slumber in new oak, Bizot fills each bottle by hand without filtration. The result is a rich, spiced, and almost exotic pinot noir with glossy tannins and a lingering finish. In the words of Nick Jackson MW, “To those lucky enough to experience them, it is obvious that Domaine Bizot’s wines belong in the pantheon of the very greatest of red Burgundies.”
