Winemaking at Domaine de Montille

The Domaine de Montille winery produces certified organic wines, only uses indigenous yeast, and generally avoids chaptalization. As a result, these alcoholic beverages rarely have more than 12% alcohol by volume (ABV).

Since the de Montilles are purists, they tend to avoid recipes and prefer adapting the wine each year. 

Here’s how Domaine de Montille red wines are generally made:

• Fermentation: The de Montilles ferment whole clusters of grapes, occasionally de-stemming the berries. The grapes are macerated for about 16 days and punched down twice a day. 

• Aging: Wines are aged in a 30% new oak barrel. 

• Bottling: After aging in the barrel, the wines undergo minimal filtration and are bottled right after.

A Brief History of Domaine de Montille

The de Montille family’s history dates back to the 1730s, and the estate has carried the de Montille name since 1863. During much of its early history, the estate sold grapes to négociants. 

It was only when Hubert de Montille took over in 1947 that things turned around for the estate. Hubert de Montille focused on making terroir-driven wines. 

Hubert’s son, Etienne de Montille, started co-managing the estate in 1995. Around this time, the estate slowly began leaning towards organic farming and implemented biodynamic principles in 2005. By 2012, the Domaine earned an official organic certification. 

In 2006, Hubert’s accomplished daughter Alix de Montille (formerly married to Jean Marc Roulot) joined the winery. Today, she supervises the making of white wines while her brother looks after the reds. 

Together, Alix and Etienne de Montille launched DEux Montilles Sœur & Frère (the Maison de Montille project), a small négociant. Through this project, they successfully bought the Château de Puligny-Montrachet. 

In January 2010, they hired American winemaker Brian Sieve.
