The second wine of the Dominio de Pingus winery is made with Tempranillo grapes sourced from the Pingus vineyards

The vineyards span over 40 hectares and are managed using biodynamic viticulture

The Pingus winery uses traditional Spanish winemaking practices:

  • Harvest: The wine is made with grapes harvested from old vines of pure Tinta del Pais, a local Tempranillo strain.
  • Fermentation: The fermentation is done with natural yeasts in a large wooden vat and lasts for two to three weeks. The indigenous yeasts help preserve the freshness of the final wines.
  • Malolactic fermentation: During malolactic fermentation, the wine develops rich toasted oak aromas.
  • Aging: Once these young wines are aged for 18 months in oak tanks or French oak barrels, they are classified as Crianza.

Peter Sisseck first came to Spain from Denmark in the early 1990s to learn about winemaking.

He started the winery and bottled his first Reserva vintage in 1995 - made from some of the region's oldest vines.

That same vintage received a score of 96 from Robert Parker, which gave Peter's tiny production international attention. Pingus is now considered by many to be the finest Spanish wine

In addition to Pingus - its signature wine, and Flor de Pingus, the winery also produces PSI, a classic wine from purchased grapes sourced from biodynamic vineyard plots in La Horra.
