How are these wines made?

Mailly Grand Cru Champagnes are mostly made from a blend of Chardonnay and Pinot Noir grape varieties, unlike traditional Champagne that also comprises Pinot Meunier.

The grapes are pressed in whole clusters. 

The juice undergoes alcoholic fermentation at 59°F (15°C), followed by malolactic fermentation in a stainless steel tank or barrel.

Mailly achieved Grand Cru status in the early 19th Century.

However, Champagne Mailly only came into being in 1929 when several Mailly Champagne growers joined forces to create Société de Producteurs de Mailly Champagne.

It was established to secure better prices for Mailly Champagne grapes, but the winegrowers eventually turned to making and selling Champagnes.

They soon built cellars to age their wines, and by the 1960s, their Champagne sales rose monumentally.

In 2018, the cooperative put into place sustainable viticulture practices and became the first Champagne cooperative to obtain a collective HEV (High Environmental Value) certification.
