  • Crushing: Grapes are vinified in whole clusters in wooden vats, and the grape must is extracted through traditional punch-downs (by foot!)
  • Fermentation: The grape must is left in the tanks for maceration before alcoholic fermentation occurs. The winery uses only indigenous yeasts.
  • Aging: The wine is kept in wooden barrel containers that sit at an angle (ensuring the sediment gathers in one spot) for 24 months for Premier and Grand Cru wines and 24 months for village wines.
  • Bottling: Wines are bottled after racking.
