Roberto’s focus has always been on cultivating grapevines that result in limited quantities of high-quality wine.

Here’s what you need to know about his vineyard practices:

  • Roberto strictly practices green harvesting (prematurely cutting bunches of grapes to reduce crop size) once the growing season starts. This process reduces the grape clusters by half.
  • A month later, he trims the grape bunches so they look like a tight fist. This ensures the final wine has a concentrated flavor and balanced acidity. 
  • The vineyards are maintained using natural farming practices and the use of chemical compounds is avoided at all costs.

In the winery, Roberto is considered to be a classic modernist with his vinification approach:

  • Fermentation: The pressed grapes undergo fermentation with indigenous yeasts in stainless steel tanks for 10-30 days. Then, the grape must undergoes malolactic fermentation.
  • Aging: Voerzio Barolo wines are aged in different barrels that include tonneau, French oak barrique, and Botti. 

The Dolcetto wine is aged in tanks.

Barolo Sarmassa and Torriglione wines are aged in a mix of 70% old and 30% new French oak barrels.

Merlot and Barbera d’Alba Pozzo Riserva wines are aged in French oak barrels for 24 months and eight more months in the bottle.

  • Bottling: Next, the wines are bottled without filtration and they’re aged for another eight months.
