How Is Sparkling Spanish Wine Produced?

Sparkling Spanish wine is produced using the traditional method (Methode Champenoise), which involves a two-step fermentation.

Here’s what happens during the winemaking process:

  • The winemaker crushes ripe grape varieties to produce the must (grape juice). 
  • The grape juice undergoes fermentation in large oak barrels or stainless steel tanks to produce a still base wine.
  • The base wines are bottled and mixed with yeast and sugar to ignite the second fermentation. During fermentation, yeast consumes the residual sugar in the wines and releases carbon dioxide.
  • Dead yeast cells (lees) are removed from the bottles through the riddling and disgorgement processes. Finally, the winemaker adds a mixture of still wine and sugar to adjust the wine’s sweetness.

How Is Sparkling Spanish Wine Different From Champagne?

Sparkling Spanish wine is made using the same traditional method (Methode Champenoise) for making Champagne but uses different grape varieties.
