Here are the different styles of Bottega sparkling wine: 

A. Gold Prosecco DOC Spumante Brut 

Bottega’s flagship, the Gold Prosecco, is made from the Glera grapes grown near the Venetian Prealps. The grapes are hand-harvested before being softly pressed. 

The winery uses the Italian Charmat method, where the wine undergoes secondary fermentation in sealed stainless-steel tanks for 40 days.

B. Rose Gold-Pinot Nero Spumante Brut Rosé

This rosé is made entirely from the Pinot Noir grape. After handpicking, the grapes are immediately pressed, with 12 hours of skin contact to ensure that beautiful pink color. 

The wine also undergoes the Italian Charmat method, with primary fermentation in stainless steel and secondary fermentation in sealed tanks for 40 days.

C. Conegliano Valdobbiadene Prosecco Superiore DOCG Spumante

Made with 100% Glera grapes grown in the hills of Treviso, the wine ferments using the Charmat method. Fermentation takes place in cuve close (French for sealed tank, it refers to the process of making sparkling wine) to allow for the preservation of the grape’s aroma. 

After fermentation, the wine spends some time on its lees. The entire fermentation process lasts around 40 days at a temperature of around 57℉ with selected yeasts added.

D. Prosecco IL Vino Dei Poeti DOC

The Glera grapes are harvested around mid-September and immediately begin the pressing process, removing the stems and separating the must from the skins.

First fermentation occurs in steel tanks with additional yeast. Following the Martinotti method, the second fermentation occurs in cuve close.

E. Petalo Vino Deli’amore Moscato

The vines grow on a sedimentary base with alkaline soils, giving this wine vibrant acidity. 

After harvest, the grapes immediately move to the press to avoid premature oxidation and exposure to the sun. 

Following the Martinotti method, fermentation occurs in cuve close with controlled temperatures. The resulting Moscato wine has a low alcohol content with a high residual sugar level.

The Bottega family first started cultivating vines in the 1600s when they were tenant farmers.  for the Counts of Collalto.

In the 1950s and 1960s, Aldo Bottega began experimenting with ways to improve Grappa, leading to monovarietal Grappa. He then formed Distilleria Bottega in 1977. 

After Aldo Bottega died in 1983, his son Sandro Bottega took over as the company’s director. Distilleria Bottega made advances in the distillation system, helping to remove excess alcohol in Grappa.

Then, in 1987, Bottega welcomed Alexander - an exclusive Grappa and vodka brand. This partnership helped Bottega produce its own glass bottles and explore the international wine market.

Bottega established its Il Vino Dei Poeti Prosecco Spumante winery in 1992, branching into the world of Prosecco.

The company began making strides in social responsibility by implementing systems to reduce water and energy consumption in 2007. 

In 2013 the Distilleria Bottega was renamed to Bottega SpA.

Today, Sandro Bottega continues to run the company, boasting over 350 wine awards.
