Yellow Tail is owned by the Casella Family Brands. It’s Australia’s largest family-owned wine company, founded by Filippo and Maria Casella in 1957. Filippo’s grandchildren inherited the family’s winemaking craft, and today the empire is in the able hands of John Casella. 

How Did Yellow Tail Become the Number One Imported Wine to the US Market?

Initially the Casella Family Brands supplied bulk wine, shipped in containers, to other wineries. 

The Yellow Tail brand was formed in 2000 marking their entry into the US bottled wine market. The Casella Family Brands partnered with W.J. Deutsch & Sons to boost the distribution of the wines. Yellow Tail became the number one imported wine to the United States by 2003.

How is Yellow Tail Chardonnay made?

The winemaking process of Yellow Tail Chardonnay involves the following three stages:

  • Harvest: Only premium quality grapes are chosen, which are harvested early to mid season.
  • Pressing: The grapes are gently pressed to extract the maximum freshness and flavor. The fruit juice is then allowed to cool and settle down before removing the harsh phenolics. 
  • Fermentation: The juice is then fermented using multiple yeast strains. The maturation on the yeast lees and the malolactic fermentation develop a lengthy oak richness and balanced acidity in the wine.
