Domaine Hubert Lamy is a prestigious winery based in Saint Aubin, the Côte de Beaune wine region. 

The winery was established in 1973 by Hubert Lamy (son of Jean Lamy). However, the Lamy family has been growing grapes in Saint Aubin since 1640. 

Hubert Lamy worked alongside his father, Jean Lamy, on an 8-hectare vineyard planted mainly in the regionale appellations. 

Today, Hubert's son Olivier Lamy (a well-respected Burgundian grower and leading winemaker of his generation) manages the Lamy family estate.

Domaine Hubert Lamy: Vineyard and Viticulture

Since taking over the estate, Olivier Lamy immediately stopped supplying grapes to negociants and sold off the peripheral vines, retaining only the best and oldest vineyards. 

Currently, the estates’ vineyard holdings cover 20 hectares (50 acres) spread across St Aubin, Puligny Montrachet, Chassagne Montrachet, and Santenay. 

Nearly 80% of the plantations comprise Chardonnay vines, and the remaining is planted with Pinot Noir vines. These vine plantations comprise one Grand Cru, ten Premier Cru, and four Village level parcels.

The Burgundian grower has also successfully experimented with different planting densities, improving the grapes’ quality. For example, the Saint-Aubin premier cru Derrière Chez Edouard is currently planted at a high density of 30,000 vines per hectare. 

The soil here is rich in limestone and clay.

The winery uses a tractor for plowing and organic treatments to achieve optimal quality of the grapes.

De-budding takes place around May, and only the healthiest and ripest grapes are selected for winemaking. 

Winemaking At Domaine Hubert Lamy

The harvest season at Domaine Hubert Lamy kicks off around September, with 40 people coming together to handpick the grapes. 

Once the grapes are sorted, head winemaker Olivier Lamy vinifies and ages each plot of vine separately, highlighting the unique expression of each terroir.  

He uses slightly varying techniques in producing the Chardonnay and Pinot Noir wines: 

  • Chardonnay: The grape juice is extracted using a pneumatic press and then fermented in large temperature-controlled oak casks (between 300 and 600-liters capacity.) The wines are aged in the barrel for 24 months before bottling. 
  • Pinot Noir: These wines feature 50 to 100% of whole clusters. The winery uses traditional vinification methods, with malolactic fermentation occurring in the barrel. The wines are racked, fined, filtered, and then aged 12 to 18 months before bottling.
