This Moet et Chandon wine is fermented in large vats and then blended and allowed to age in small barrels for several months. The estate follows the Méthode champenoise, where the best components of each barrel, selected by the Maître de Chai, are blended.

The second fermentation takes place in steel tanks and lasts about 6 weeks. 

After the second fermentation, the wine is moved to cellars specifically made to store Champagne

This aging splits the lees (sediment) from the wine and results in a soft, well-rounded taste. The wine then undergoes bottling under pressure, to maintain this delicate balance.
